Good Morning Everyone. This is my first blog post of my new blog, I have been blogging for years about various things and I find that having a blog helps me to have the reference material I need for my books as well as my memory! 🙂
And for this project, I think I will need LOTS of help getting through the next 90 days. I can’t believe I’m actually going to do this… I am going to go “non-processed” and I think I must be crazy. I can’t even imagine what I’m going to find on my first shopping trip to the local grocery store, I mean, I have gotten into the habit of buying frozen processed food, and throwing it into the oven when I get home from work.
I have faint distant memories of me as a younger mother, with slightly more time, making the comfort foods like lasagna, baked chicken in various forms and lots of grilled stuff… but somewhere along the line, I allowed myself to get beat down by my kids persistent demand for pizza and chicken nuggets and I starting taking the path of least resistance. OK. sounds like I’m blaming my kids… the honest truth is, I got divorced and I took the easy way out. I did that…. however, the great news is that today, I am taking this moment, and making a (how does Anthony Robbins put it? btw love AR, here’s a great interview) Anyway, he says to take immediate actionable steps…. and that’s me right now.
So, for a little background, I’m a single parent with three children ages 12, 10 and 9. I work 40 hours for a local computer company as a customer service rep and software application specialist and last year I launched my professional coaching business Health Wellness & Success LLC, where I work with women entrepreneurs and coach them towards their personal success goals.
My business is booming and perfectly suited for me because along with my geeky totally computer freaky side, I have always had the big picture habit, the ability to see possibilities and to understand when someone is limiting their potential. That’s what coaching really is, it’s asking someone to set a goal… then helping them come up with the action steps and helping them keep themselves accountable. Helping them stay on track.
So, today I’m here. Today I’m coaching me, and you’re helping. 🙂
I’m here because for the last few months I have been putting off this moment. This moment when I decide to take control of the physical health of myself and because I’m the only adult in the house, my kids. There is no excuse.
You see, a chance conversation caused me to really think about it, and then admit to myself that I am in charge. Whether my children WANT to eat the chicken or not, doesn’t matter. I am in charge. “It’s easy” is an excuse for not taking a “better” route. I’m also listening to the latest book by Deepak Chopra on Audible called Spiritual Solutions what’s interesting about this book are two things, first Dr. Chopra defines spiritual as a type of awareness. He is not talking about religion, the man made convention… but more of an awareness of what’s going on around us… and he has said something that has really spoken to me since I heard it… Spoken in my own ability to be aware of things in my life… and patterns… and people… and it is: Normal does not mean true.
Normal does not mean true.
Yes, it is normal for me to come home tired and want to just put the chicken nuggets in the oven because it’s easy to cook, the kids don’t argue, they don’t tell me they don’t like it, they don’t refuse to eat it. BUT… that doesn’t mean it’s the right thing to do.
I want my normal to be different.
I am the only one that can control what is normal for me.
As it turns out, I have been setting myself up for failure because I tell myself, I don’t want to eat that stuff either. I WANT JUNK. For the last 48 years I have to spoken to myself with the following comments.
I don’t like vegetables
I don’t like to cook
I’m not very good at cooking
I love pizza
I’m not really a meal person, I’m a snacker, I’m a grazer
Today I have decided to make my first shopping trip.
My initial definition of processed will be as follows: Any food that contains ingredients that I can not duplicate in my kitchen will be considered processed. Sounds pretty easy, right, however I have to take into consideration oils and some oils are highly processed and go through bleaching and deodorizing, while others don’t. I’m going to try to stick close to olive oil, avocado oil, nut oil, butter, ghee, lard and extra virgin coconut oil as best as I can. AND the grains I’m going to try to stick with whole grains. I believe that when it comes to the grains, most of the products I usually purchase will be knocked out of the park LONG before the grain becomes an issue.

Here’s the Breakfast Cereal I’m going to make

8 cups rolled oats
1 1/2 cups wheat germ
1 1/2 cups oat bran
1 cup sunflower seeds
1 cup finely chopped almonds
1 cup finely chopped pecans
1 cup finely chopped walnuts
1 1/2 teaspoons salt
1/2 cup brown sugar
1/4 cup maple syrup
3/4 cup honey
1 cup vegetable oil
1 tablespoon ground cinnamon
1 tablespoon vanilla extract
2 cups raisins or sweetened dried
|1.||Preheat the oven to 325 degrees F (165 degrees C). Line two large baking sheets with parchment or aluminum foil.|
|2.||Combine the oats, wheat germ, oat bran, sunflower seeds, almonds, pecans, and walnuts in a large bowl. Stir together the salt, brown sugar, maple syrup, honey, oil, cinnamon, and vanilla in a saucepan. Bring to a boil over medium heat, then pour over the dry ingredients, and stir to coat. Spread the mixture out evenly on the baking sheets.|
|3.||Bake in the preheated oven until crispy and toasted, about 20 minutes. Stir once halfway through. Cool, then stir in the raisins or cranberries before storing in an airtight container.|
Here are my proposed Dinners…
Monday night will be pulled barbecue chicken from the crock pot with homemade barbecue sauce.
Tuesday Night will be whole wheat Pita Pizza (simply sauce and mozzarella)
Wednesday Spaghetti (’cause I’ll need to use the rest of the sauce) (I’ll be looking for wholewheat spaghetti, but I’m not sure)
Thursday Chicken Salad – this looks like a great recipe and I’ll just add some chicken to make it a meal
Friday night… left overs! Probably some barbecue chicken, spaghetti and more!
OK, snacks. Apples and Grapes (farmers Market Special)
Lunches. This is going to be tough. This is the always hard. This is the part that always gets me stumped. Does anyone have any suggestions?
I guess I’m going to see if there are any lunch meats without nitrates and send them sandwiches. My picky eater is so picky, I think she will just have slices of mozzarella and some fruit.
Thank goodness for the farmers market!
My challenge is to try to feed us with these things for under $60.00. I won’t include the gas to drive to the farmers market and then to the grocery store. What do you think? Will I be able to do it? I’ll keep you posted ( no pun intended)
